I whipped this dish up late last night....it was soooo YUMMY!
This made just enough for me and my husband (even though he didn't eat any!)
Take two medium size zuchinni and cut in to "spaghetti" like pieces. Or if you have a mandolin, into thin strips.....I cut mine by hand.
Saute in one tablespoon of coconut oil on low heat until the zuchinni takes on a "spaghetti" like consistency.
While that was cooking I started the meat sauce...which I like really meaty.
1lb of ground beef
1lb of ground moose (you can use two pounds of beef)
1 large white onion diced
Garlic - put in however much you like, I use garlic that is already minced (I get this at Sobey's) to save time
One Jar of your Fav organic tomato sauce/pasta sauce
Cinnamon - just a sprinkle for nutty flavour
Paprkia
Chili Flakes
**Note I don't have amounts for the spices. It is all about taste and what you like. If you like spicy, but lots of flakes in, if you like a big smoky flavour then put more paprika in.
Be sure to taste as you go along to make sure you get the proper flavour you are looking for.
Cook the onions and garlic in a bit of coconut oil until translucent.
Add your meat and brown...make sure you crumble up the meat...you don't want clumpy meat sauce!
Turn to low heat and add the sauce and spices. Simmer for 15 mins until the flavours come together.
